Grapes are handpicked and vinified on site. Musts are obtained from a gentle pressing, and fermentation conducted using selected yeasts at controlled temperatures of 68° to 72° F.

After careful selection of the bunches, a soft crushing is carried out. The resulting juice is fermented at a controlled temperature, followed by refining in stainless steel for four months, after which it is bottled cold-sterile.

The grapes are harvested by hand and scrupulously selected, then destalked and crushed; the must produced remains in contact with the skins for a short time at a very cool temperature of 41-43°F.

The “red” vinification of Lagrein (Dunkel in the local Germanic dialect) is conducted at a temperature of 80° – 82°F, with a long maceration period on the lees in small stainless steel vats.

Handpicked grapes are macerated on the skins for 8-10 days in stainless steel tanks. The resulting wine is matured partly in large barriques and partly in oak barrels for a maximum of six months.
